Lemme talk to you about breakfast’s most simple and straightforward gift- toast.
Creative toasts are a staple in my kitchy. In this case I'm getting toasty with English muffins. I could literally put anything on them (and have). Quick to make and easy for little hands to hold! We grew up with cream cheese smeared with jelly. Lets pick it up a notch in the ingredients department but leave it at “beginner” in the difficulty department. Good? Good. This recipe's combo of creamy cheese, yummy berries with salty pistachios, and sweet honey is spectacular because it works for pre-bra weekday mornings when you’re heating up your coffee for the second time or Sunday brunch with your friends and their kids (at your house) when you want to feel like an adult who still had time to go out to brunch and try that cute little braid in your hair. The presentation is gorg and it takes 5 minutes to assemble. Maybe you will have time to put that bra on!
So check it. The base of this morning's masterpiece is a cinnamon raisin English muffin. Sure you can use regular bread but the cinnamon and raisin flavors are just so fabulously fancy (without actually being fancy at all). After toasting those babies, we start by using the perfectly spreadable and yummy Ricotta cheese. Ricotta is creamy and slightly sweet which allows the berries to do the talking while also keeping them glued to the muffin. We've all grit our teeth after smashing a blueberry between our toes. Ricotta's smooth texture is perfect for novice chewers missing some teeth (my daughter doesn’t get the whole “chewing thing” and often gulps- which makes me a nervous wreck). The berries, plumped with antioxidants and rich in vitamins are a homerun for any meal, and the crushed pistachios give a nice salty crunch cause hey, kids have complex pallets too. Did I crush my pistachios in a paper towel under a wine bottle? Yes. The final drizzle of honey adds the perfect touch of sweetness. This toast can totally kick butt without the honey if your pediatrician recommends no honey before one or if your little one likes using their hair as a napkin.
Don’t let the simplicity of this fool you.

2 Cinnamon Raisin English Muffins
1 cup Berries (your choice but I used blueberries, raspberries, strawberries, and blackberries)
1/2 cup Ricotta Cheese
1/4 cup Crushed Pistachios
A few drizzles Honey
- Halve muffins and toast them to desired crispness. Set aside.
- Slice or halve berries while muffins are toasting
- Smear muffin halves with a generous layer of ricotta cheese, then top with berries, pistachios, and honey drizzles.
*To crush pistachios I find it easiest to fold up in a paper towel (once shells are removed or straight out of the bag if you're like me and buy them pre shelled) and hammer with a wine bottle. A hammer also works but wine bottles are way more convenient.
