Why you need these in under 30 secs
These muffins are no joke! I created these after I saw how many calories were in my go to banana chocolate chip muffin from Starbucks. Not cool.
I LOVE these muffins because they are HEALTHY and because they actually taste fluffy and moist. So many healthy things taste like cardboard... not these pups!
Cornstarch! Yup, I had never cooked with it either. You'll see below in the recipe that you just sub out one tablespoon of flour for a tablespoon of cornstarch and voila!
Make sure to use white whole wheat flour or plain white flour as opposed to whole wheat flour which is usually a bit denser.
The fact that they take 30 minutes and only dirty one bowl is like totally extra credit.
No sugar meltdowns or toddler lunatics to control.
They also make fantastic mini muffins!
1 Bowl 30 Minute Healthy Banana Chocolate Chip Muffins
3 very ripe bananas, mashed
¼ cup honey Greek yogurt
¼ cup coconut oil
¼ cup honey
3 tablespoons milk
1 teaspoon vanilla
1 ½ cups white whole wheat flour or plain white flour, minus 1 tablespoon
1 ½ teaspoons baking soda
¼ teaspoon salt
1 tablespoon cornstarch
½ cup chocolate chips
Preheat oven to 350
Prepare a muffin tin with non-stick spray
In a large bowl, mix together the wet ingredients; bananas, egg, yogurt, coconut oil, honey, milk, and vanilla.
In the same bowl layer on your flour
Sprinkle the baking soda, salt, and cornstarch on top. Avoid having them touch the wet ingredients.
Combine above ingredients but keep stirring to a minimum! Do not over stir!
Fold in chocolate chips
Pour batter into muffin tin, filling each cup slightly below the top
Bake at 350 for about 15 minutes or until toothpick comes out clean.
*mini muffins bake for about 10-12 minutes.
