Healthy Apple "Donut" Slices with Coconut Cream Cheese Frosting

Healthy Apple "Donut" Slices

Donuts are everywhere! No matter how they are photographed they always look delicious.  I looooove looking at them in IG pics.

Real talk- I'm not looking to eat a bunch of actual donuts right now though.  And you know I'm not going to pretend that I ate them all because they "just looked soooo delicious." Not my style.

So... I took some apples and fancified them to look like adorable little donuts by spreading coconut cream cheese frosting and dusting rainbow sprinkles on top of them.

This is a win.  I promise.

I mixed the frosting up with just a whisk.  You don't need a food mixer.  If you have a knife, bowl, and whisk or spoon you can do this.

I promise I try to keep my ideas as simple, easy, and as quik as possible for you!

Using plain cream cheese just seemed boring and not even that good with an apple.  Don't be intimidated though, I stepped up the cream cheese game with just a couple things you probably have in your kitchen.

Hint: you're not buying or samurai chopping an actual coconut.

ALERT: you DO NOT need to use food coloring.

I did because I had it in the cabinet and because I'm dying for spring colors. Here's a photo showing you how cute the apple slice is just plain white with the sprinkles.

Slice them as thick or as thin as your little one can handle. You can use a knife to cut the core out of each slice or try a pastry tip if you have one.  Again- whatever works.

You're kiddo can spread the frosting on with a spoon, sprinkle the sprinkles, or just be pumped to eat them.

Here's what you need:

2 apples

4 ounces whipped cream cheese

4 ounces honey Greek yogurt (or plain)

1 tablespoon coconut oil

½ teaspoon vanilla extract

2 drops food coloring (optional)

Fun sprinkles

1.     In a mixing bowl, whisk together the cream cheese, yogurt, coconut oil, vanilla, and food coloring (if you're using it) until smooth and creamy.  About 1 minute. Refrigerate while preparing apples or until you are ready to use.

2.     Slice apples and remove each core from center using a knife or pastry tip

3.     Spread frosting on top of each apple slice

4.     Dust with preferred sprinkles

Thanks for reading about my apple donut slices and getting all the way to the bottom of the post.  Time is precious and even reading this takes minutes away from something else so I appreciate it!
